Journey Part 19: The Final Countdown!

Whoa…we are in the final countdown, folks!  It’s hard to believe.  It’s scary.  It’s exciting.  It’s tiring.  It’s energizing.  It’s just plain crazy around here.  Work blends into sleep and sleep blends into work which isn’t restful come to find out.  My good eating habits have hit the high road because I must keep a fine balance of caffeine and sugar to counteract my lack of rest.  I’m behind on pretty much everything and my list keeps growing (how does this happen!?!).

I know, I know…this may sound like a pity party, but it’s really not.  Just reality…and to be expected with only a few weeks to go.  It actually feels good (believe it).  How can seeing a long-term goal take flight not feel good!?  Though I do enjoy sleep.

What’s on tap for this week??

• Interviews – we need great people to be a part of our team of two.
• The final inspection –  we passed all of our preliminary inspections last week, so the final is the last step to freedom.  Our destiny awaits.
• Kitchen time – we are finally able to bring ingredients into the kitchen so it’s testing time.  Getting my home-tested recipes in tune with our production kitchen takes time and tasting.
• Training – our new team has to be trained and creating training materials is no small task – I’ve started, but I’m a brilliant procrastinator!
• Operational Docs – again a work in progress, but this WIP needs to reach completion by the end of the week. Yikes.
• Orders – this bakery won’t run on fumes, so we’re filling ‘er up with lots of stuff…including the delicious ingredients we’ll be baking with.
• Paint touch ups, finishing touches, handyman work galore.

The list goes on, but I cannot.  Back to work, but first a few pics of our progress!
